Comfortable cider pubs can be found in all of Frankfurt's historical districts, you recognize them by the pine wreath over the entrance. Sachsenhausen and Bornheim are particularly famous as cider districts. The first must is sold in autumn as "Suesser" (sweet one), after the first fermentation the new wine is called "Rauscher". Around Christmas the new cider is ready. Containing about 5% alcohol, this cider has got a dry, slightly sour taste. In the pub you order the cider "pur" - pure cider, "sauer gespritzt" - with sparkling water, "suess gespritzt" - with lemonade, or - highly recommended - in winter "heiss" (boiling hot, with sugar, cinnamon, cloves and lemon) You drink the cider out of special glasses, "Gerippte". Should it be inconvenient, to order the "Schoppe" - the glasses of cider - individually, ask for a "Bembel" - the traditional pitcher. Originally in cider pubs the menu was limited to: hot sausages, boiled pork meat (e.g. "Haspel" - knuckle -, "Leiterchen" - ribs - or "Schaeufelchen" - shoulder), the famous Frankfurt Green Sauce made with eggs, herbs, oil and vinegar, sweet or soured cream, yoghurt, creme fraiche or "quark" ( a kind of curd), there are many variations of the Green Sauce, only the necessary seven different types of herbs are agreed upon, "Handkaes mit Musik" - a kind of Harz Cheese with onions, vinegar and oil, Schneegestoeber - camembert mixed with cream cheese, pepper and paprika, and, as a side dish, bread, boiled potatoes, potatoe salad and sauerkraut.
