Czech Easter Bread - Mazanec

This yeast cake tastes nice with coffee or red wine.

Mix 40 g / 1.41 oz yeast, 1 teaspoonful of sugar, 2 tablespoonful of milk, add some flour.

Put 750 g / 25.5 oz flour, 150 g / 5.3 oz sugar, some salt, a sachet of vanilla sugar, some grated peel of an untreated lemon into a warm bowl and add the yeast mix.

Stir with 3/8 l lukewarm milk (0.8 US pints / 0.7 Imperial pints), 2 egg yellows and 150 g / 5.3 oz melted butter or margarine, knead by hand. The dough should not stick.

Cover and leave to raise for 1 hour. Add 50 g / 1.8 oz raisings and / or 50 g / 1.8 oz chopped almonds, knead again and leave to raise for a while.

Form a round loaf from the dough, lay on a greased baking tray or a tray covered with baking paper, coat the loaf with whisked egg. Leave to dry, then, with a sharp knife, cut a cross through the middle of the top of the loaf. Bake slowly at 180 - 200 degree Celsius / 356 - 392 degree Fahrenheit in the middle of the oven for 45 - 60 minutes. Sprinkle with caster / superfine or icing sugar.
