Try your fitness by hiking or mountain-biking on the Rennsteig Trail through the Thuringian Forest and the Schiefer Mountains from the Werra river near Eisenach to Blankenstein on the Saale river.  Near Bad Salzungen, the Ulster Valley and the Felda Valley Cycling Trail take you from the Werra river into the Rhoen Nature Park.
